Yummy Yam Fries

 

Regular white potato fries can’t compare to the flavor of these. Yams have a low glycemic index, so they don’t “mess” with your blood sugar, are loaded with natural antioxidants and eye protecting plant chemicals called carotenoids, and fit in with our trending back to the paleo diet. Also of note; they are not a part of the nightshade family. Some of us have difficulty metabolizing and excreting the bad chemicals in nightshade plants (white potatoes, tomatoes, eggplant, etc.), and this may manifest in osteoarthritis. So enjoy the tasty yam fries without guilt!

Pre-heat the oven to 400 degrees

Scrub the skins of yams, and peel if desired

Chop into French fry sized slices

Put into a baking pan and add a good olive oil, about 1/8 cup to 2 large yams, mix yams to coat

Add a sprig of rosemary, or ground rosemary, basil, or oregano (let yourself go wild with creativity)

Bake for one hour, stirring occasionally

Eat and ENJOY!!!
